| About: | Souffle's facade is so modest you'd easily pass it by without notice. That would be unfortunate, because it is worth seeking out--especially for its namesake dessert: the best souffle in the state. The long dining room has a collection of oil paintings. Cuisine is classical French. |

An intimate, charming place with excellent food and service.
The maitre' de is from Ecuador. He's wonderful and we really wanted him to sit down with us. The Grand Marnier souffle was highly recommended by our innkeeper and we were not disappointed. It is quite decadent.
The restaurant is convenient to everything.
Exquisite French across from Summit Train Station: Romantic setting and power lunches served here. Food is traditional French. And don't forget to leave room for the Souffle, of course!
Good Souffle: Souffle is good, you must try the coffee souffle. Liver and Snail is okay.
