God, you sure can tell the yankees with their references to bbq as "pulled pork." I have eaten at Wilbur's all my life. The Q is not chopped right any more. It comes in little chunks. The sauce is not right. I came prepared, as I always do, to take back several pounds in a cooler, but after eating it this time, I hate to say it, but I wouldn't feed it to my dog. It makes me sad because Wilbur's has always been among the very best. My relatives tried to gently hint that maybe I should go to McCalls instead, but 40 years worth of a consistent product was good enough to keep me at Wilburs. But no more. I think the guy who posted a review about McCalls being the place to go may be right. Wilbur's was so bad this time, I am going to give McCalls a shot. Darn, this is almost sacrirelgious, but I can't deny what has happened to Wilbur's.
Wilbers is very good and their service is excellent. We always stop by on our way through Goldsboro. It's very dependable and priced well.
Wilbur's is the best barbecue restaurant that I know of in Eastern North Carolina.
For those that don't know about east NC style barbecue (there are 5 main types of barbecue in the US -- east NC, central SC, Memphis, Cincinnati, and Texas. There are regional variations on each main type.)
For those in New England, or possibly some other region in the US, barbecue refers to a special kind of cuisine but not simply to a "cook-out" over a charcoal grill.
Eastern North Carolina barbecue is usually made with pork that is smoked with wood, ideally hickory, and shredded and served with a spiced barbecue sauce based on vinegar. The sauce is thin and watery and fairly pungent. Wilbur's excels with the sauce because of its complex blend of spices and peppers, as well as serving very well-cooked pork.
Wilbur's also sells chicken and beef barbecue, but these barbecues aren't as good as the pork barbecue in my opinion. These will satisfy those who want a less spicy flavor.
Eastern NC barbecue typically comes with potato salad and cole slaw, which I recommend. Both these are good at Wilbur's; the cole slaw is North Carolina style unlike cole slaw from other regions.
I have eaten in many East NC barbecue restaurants, where the barbecue ranges from fair to good. The best competitor with Wilbur's (in my opinion) is Bob's in Rocky Mount, but that barbecue lacks the subtle flavor of the vinegar sauce that Wilbur's has.
By the way, there are two kinds of eastern NC barbecue: barbecue that has pork skin (rinds) included, and barbecue that does not. Wilbur's does not have the skin. It is a personal choice about which you might prefer.
Because of high customer demand, Wilbur's sometimes sell out of all barbecue and turns customers away. If you are coming from afar, try to contact the restaurant a half-hour or so before your arrival to inquire if they are about to sell out. If so, go to Bob's which has a buffet counter.
When I go, I buy two pounds or more of the barbecue to take home and freeze since I now dwell far away from Goldsboro.

bryan4, i too am disappointed in wilbur's which has been a lifelong favorite barbecue place. i think it started going downhill once he got his 'mansion' paid off. i quit a few years back when i started seeing the critters(roaches)on the floor. sorry to be so gross but i was shocked Wilbur Shirley would/could let it get so bad. what a loss!
