I wish I could give 4.5 stars, because I enjoyed my recent lunch at Blue Corn that much! I was impressed by the variety of the menu, with both meat and veggie options. I enjoyed the vegetarian burrito a lot. It's more Latin American than Tex-Mex. The atmosphere was relaxing, and the service was good.
    The biggest challenge is parking.

Very enjoyable: Lots of vegetarian options--even their beans are vegetarian.
I've been many times and I've always had a good meal at a decent price.
Staff is friendly and attentive; the owners often chat with customers.

Not what it could be: This restaraunt isn't bad; it's just underwhelming. That being said, I still eat there with my friends when they want to go. As far as the Mexican and Cuban aspects go, those flavors are scaled way back. Some people like it that way- not me. So for me, the food was a little bland. I brought one of my friends (Cuban by way of Florida) there, and he, too, was underwhelmed. The chips with the five salsas may be your best bet. I think the waitstaff is great. I like the local feel. I just wish the food would step up to plate.
