REALLY GOOD FOOD, GREAT PLACE, FRIENDLY SERVICE.... MY HUSBAND DOESN'T EVEN LIKE MEXICAN RESTAURANTS OR FOOD AND HE ACTUALLY ENJOYED THIS PLACE... AND THE MARGARITAS ARE AWESOME!!!!

Let me start by saying if you're going to Rosies off of South Parkway, request Virgil to be your server. Very courteous, hard working, and will do everything he can to meet your needs. After going theere for about 4 years now, my wife and I consider him to be a personal friend. Make sure to tell him that Brian and Steph sent you.
I always caution hyping a restaurant too much because people will have unrealistic expectations. Rosie's is a fantastic place to get quality tex-mex food. My wife and I eat there about once a week and have been doing so for years now. To begin with, I always start out with a margarita on the rockks with salt. The frozen mug the margarita comes in absolutely makes the margarita! No lukewarm margaritas here. My wife gets the frozen strawberry margarita. We always manage to knock a few of these out. Although I'm not a big salsa person, I always eat a good bit of it. It's made from scratch (as are most things there) and balances heat and acidity with cilantro and onion--very tasty. The tortilla chips are also made in house. My wife and I always get a cup of the queso blanco (white cheese) dip. There cheese is grade A and not thinned out with milk. The margaritas and cheese dip are a staple of our visits.
For dinner, my wife consistently has the cheese enchiladas. One of the best things about Rosie's is that you can personalize your meal. My wife always gets the chicken enchiladas with flour tortillas (they're less chewy) and the yellow cheese sauce. They are to die for! The dinner comes with fluffy, sticky spanish rice and homemade refried beans
For me, choosing is always difficult. I've tried everything on their menu with the exception of the shrimp dishes (just not a shrimp fan personally). I especially love the beef fajitas. The beef is marinated in something out of this world. Also the tortillas are warm and fresh, made in house of course. I also love the beef burrito, enchilada combo, fajita nachos, and mexican lasagna. There are a few things which I don't personally care for, for example the chile relleno and shredded beef.
What makes Rosie's different is quality. The ground beef is grade A, as opposed to the much lower quality you get up the road at the cheap, buffet Mexican restaurants. Most of the food is made from scratch in house. Will this difference just knock your socks off? Probably not, which is why you see negative ratings from people. They go to the restaurant thinking they'll get food out of this world but in all reality, the difference is in the details. Is it more expensive? Yes, you will not get full off of $4 here. The average dish costs $11. But I would rather pay a little more and know I'm getting quality ground beef rather than pay less and get ground beef from places off the cow we won't mention here.
To finish dinner off, if you're still hungry, definately try the tres leches cake. It's absolutely delicous. The service is great at Rosies and the atmosphere is very inviting. In fact, I'm going to eat there in about 30 minutes!!!
