We were traveling the area and were drawn in by the sign on U. S. 190 proclaiming Bourque's the "Home of Jalapeño Sausage Cheese Bread." So we turned off the highway, deciding to give this delicacy a shot. We were rewarded with some wonderful items in addition to the bread. The cracklins were fresh and well seasoned. The butcher shop was full of homemade specialties at very reasonable prices. Most of the on-premises made sausage is between $3.50 and $3.99 per pound which is a fair price in our day and time of near $3.00 per gallon gas. I purchased the hot hoghead cheese, it's meaty and well-seasoned, not a lot of empty gelatin in it.
The andouille is ground, not chunky, but it, too, is well-seasoned and flavorful. It made a stellar gumbo.
The bread is good, the flavors are subtle, in fact the sausage is a bit more prominent than the jalapeño peppers which are usually a strong flavor in any dish or product. I haven't yet tried the green onion deer sausage I purchased, but it's beautiful as was the alligator sausage which I didn't buy.
