Of the two places to get Japanese/sushi in Hot Springs, this is the better of the two. they suffer from a terrible location in one of the slower parts of old Hot Springs, but they make up for it through effort and quality of food. The food is very good and the hostess and chef are very gracious. We eat here several times each month and always enjoy our food!

I've eaten at Japanese restaurants in Connecticut, New York, California, and now here in Arkansas. So far, the best has been Taro's in Sacramento (different story), but Fuji made for a welcome bit of good eating here in Hot Springs.

    Things to look forward to:
    * The Fantastic Roll (eel, salmon, and avocado) is very tasty
    * The restaurant is not too busy, and the food and service are good
    * prices are reasonable and ingredients are surprisingly fresh
    * The boxed teriyaki chicken dinner is a great value and gives you some of everything

    Let downs/Things to avoid:
    * The salad was sad and almost seemed a second thought. The ginger dressing was uninspired
    * Avocados seemed a little brown, but were still good to eat
    * There doesn't seem to be enough staff, but given the low customer volume it's clear they don't really need it.
    * Where are the hot wash cloths delivered upon sitting down?

I only gave this restaurant three stars because, frankly, the food is average and the experience was low-key. That should not deter you from coming here because you will enjoy your dinner and your wallet will appreciate it too.

Bottom line: This nice, average restaurant deliveries the Japanese equivalent of the "down home, Mom & Pop" neighborhood restaurant. Keep your expectations modest and prepare to enjoy your meal despite a few cosmetic shortcomings.

Any restaurant that isn't busy on a Saturday night when the others have a 2 hr wait ought to tell you something. Next time we will know better. I don't know what the people are talking about that left such glowing reviews, except maybe the Fuji people themselves are leaving them. I all ready wrote the following at the Google maps review of this restaurant and share it here with you just so you are informed:
Maybe at one time this was a good restaurant, but not anymore.
The grill is not set up so all can see that are sitting around, the chief had his back to us. He only trick - he tossed an egg to his hat, he missed his hat and dropped it on the floor, scooped it up and throw it away but continued to use the same spatula he picked it up with. The shrimp was very good, but the steak wasn't very flavorful. My husband got a skimpy amount of veggies,no broccoli at all, while he gave others in front of him a second scoop. The waitress was winey and didn't listen very well. I had never been to a Japanese Steakhouse and my husband felt so bad and kept apologizing, because this one fell so far below any that he had been to.

You are absolutely right. We had the same experience with the service as well as the unequal portion sizes. We pay the same amount but do not receive the same amount of food. We used to go in there a lot, but everything has gone downhill and we will not be going back.
