Get there early: You need to get there early that way you get the best meat and beat the crowd. Coopers can be hit and miss sometimes due to the crowd. I like the Big Chop and Brisket. So if you want moist tender meat get there early.

Much ado about nothing: Maybe I was disappointed because I had heard SO much about this place and Texas Highways readers polled it as number one, but I wasn't very impressed with the food. I tried to keep my bias out of the critique because I do like City Market in Luling, so I kept an open palate as I savored each bite. The rub that's used on the meat is good, yes. The sausage looked like something I could buy at the grocery store and not something that was made there so I was disappointed in that. The ribs were palatable, but not the melt in your mouth morsels that I've had at other places. The meat was dry and a little tough. The prime rib was not as tender as I expected, maybe the pit toughens the meat a little, and it didn't seem right that the prime rib tasted smoked. It was like taking the debutant to the honkey tonk watering hole. (That's just my opinion). Then we got to try the pinto beans, they were tasty and the floating jalapenos gave the beans a unique flavor. Lastly was the BBQ sauce. It was very thin and watery, more like a marinade to soak the meat in. It had good flavor but it ran off the food therfore not doing it's job as far as enhancing the flavor. I was really looking forward to trying this place, but I'm sorry to say that I was disappointed.
