I really don't understand what the big deal is. The food is pretty good, but this is fast food and self-service. You order at a counter and your food comes from around back of the kitchen where they yell your number over a loudspeaker. It feels much like a cattle herd being shuffled through. I felt rushed and pressured from the moment I walked in the door. Our first time there and the cashier was giving us the hurry up and order look as we perused the vast menu. When I ordered my dinner the cashier didn't even ask me what type of meat I wanted. She seemed very impatient and in a hurry. They nickel and dime you for everything including chips and hotsauce (with no refills on chips), tortillias, etc. We paid 23 dollars for 2 modest dinners, chips and an empty cup to fill up myself from the salsa bar, and empty drink cups you fill yourself also. The flour tortillias are to die for, but that's about the highlight of it. You get 2 with a combo meal, others are as you guessed, extra. The flavor of the food was alright, but nothing beyond any other tex-mex restaurant. For 23 dollars, I don't expect Taco Bell, I expect a full-service set up with waitress and unlimited chips, hotsauce, and flour torillias, not having someone shove my food out of a window and having to get my own hotsauce and drinks. Don't get me wrong, the place was packed to the walls with people who obviously feel this is the best stuff they ever put in their mouth, its definately better than Taco Bueno or Taco Bell, but I would expect the total cost to be more reasonable for the atmosphere and style.

We had the pleasure of stopping by Rosa's Tortilla Factory today in Lubbock, TX. The food was delicious. The sauce on the creamy chicken enchiladas was so light and tasty. The home made flour tortillas and sopaipillas were light and fluffy and beyond delcious. The ambience was open and friendly. The staff members we spoke with were happy with smiles. We'll definitely be back and will tell all of our friends to stop by.
