    Listen Up NYer's... It Ain't All About Cheese!: I'm originally from Connecticut, home of the best Neopolitan pies on the east coast. Pepe's, Sally's, Modern, etc. I also lived in New York for 12 years. My advise to all of you who buy into the "NY Pizza" hype is to WAKE UP! Unless you live for cheese, NY pies ARE NOT THE BEST PIES OUT THERE! But if you're like me and enjoy tasting fine sauce and excellent toppings, a thin crust Neoplolitan, light on the cheese, is the only way to go. And when I discovered Protos several years ago, I knew I had found a true treasure in Denver! Go, by all means, GO TO PROTO's! You won't be disappointed!

    Amazing: Paper-thin crust, baked to perfection. This is true neopolitan za, tossed and made infront of your eyes. Served up in a hip setting. Everything tastes fantastic and the pies have the perfect mix of sauce and cheese and are not overloaded with the fresh toppings.
