This is a great dining experience. The place oozes character with the building and the view. Eric Herrera playing Native American flute completes the picture.
The food is quite good. We shared buffalo empanadas as an appetizer. I recommend the Fort Dixon chili sauce with them. Neither of us could resist the elk on the main menu. It was well-prepared and the white cheddar garlic mashed potatoes make an excellent side. The elk does come in a huckleberry sauce that is sweeter than I (and my Broquel Malbec, for that matter) would have preferred. Anyone ordering wine with that dish is advised to take that into account. I would probably go domestic Cabernet Sauvignon or old vines Zinfandel if I had it to do over again- and I hope to. We ordered dessert, but probably should not have. Dinner portions are ...generous... and the desserts were a come down. My wife was particularly disappointed by the chocolate bourbon cake.
The wine list is extensive and well-chosen. Hence those Wine Spectator awards you will notice on the front page. There are some good values to be found, but shop carefully as there are also four-digit wines.

Restaurants range from unpretentious lunching or dining places catering to people working nearby, with simple food served in simple settings at low prices, to expensive establishments serving refined food and wines in a formal setting. In the former case, customers usually wear casual clothing. In the latter case, depending on culture and local traditions, customers might wear semi-casual, semi-formal, or even in rare cases formal wear.
Typically, customers sit at tables, their orders are taken by a waiter, who brings the food when it is ready, and the customers pay the bill before leaving. In finer restaurants there will be a host or hostess or even a maître d'hôtel to welcome customers and to seat them. Other staff waiting on customers include busboys and sommeliers.
Restaurants often specialize in certain types of food or present a certain unifying, and often entertaining, theme. For example, there are seafood restaurants, vegetarian restaurants or ethnic restaurants. Generally speaking, restaurants selling "local" food are simply called restaurants, while restaurants selling food of foreign origin are called accordingly, for example, a Chinese restaurant and a French restaurant.
The Fort is one of the restaurants I think about when someone asks me for a uniquely Colorado restaurant. The restaurant outside is a reproduction of Bents Fort and coming into the courtyard you can almost feel you are leaving the present behind and stepping back into the old west. Once you come inside, that illusion fades away as the smells from kitchen hit your nose and your mouth starts craving to taste what is coming out of there. The menu itself is very game heavy with buffalo, quail and many other items to tempt you.
The fort is a great place to take friends from out of town to show them a piece of the old west or just to go and enjoy for yourself.
