Dear Steve; I would like to congratulate and thank you for the initiation of your delivery service to Maui, Hawaii, in February 2011. I had been made aware of your excellance and tradition by a member of your community, who had previously gifted me with your t-shirt, and also informed me of last year's "April Fries" event. Then to my surprise and total enjoyment, Russ delivered your delightful cheeseburger, which had been specially prepared and frozen, for our traditional ANNUAL FIRST MAUI SUNSET TOGETHER - Wow - what a treat !!! I was so overwelmed, that I didn't know how to respond - other than to share a bottle of Tommy Bahama Rum with Russ, unknowing what the appropriate tip should be for a 3000 mile delivery. Notice in the photo they have a pan of raw burger meat sitting out on the counter. By the heath code this is suppose to be refrigerated to prevent cross contamination. When I visited I never saw the cook wash their hands between handling the meat and handling the raw veggies.

Mark has a point but then I'm an ol' farmer with the 3 second rule. I've been on this earth for 55 years and aint dead yet. Oh, my meat does have to be DEAD so I guess any "contaminates" by Marks standards would be cooked away.
Good point though for Mark, there are those out there that can be overcome.

Preparation of Ready-To-Eat Foods. Ready-to-eat
foods must not be prepared in areas where raw meats are
processed, except by scheduling and proper cleaning
between operations.
3-302.11 Packaged and Unpackaged Food - Separation, Packaging, and
Segregation.*
(A)FOOD shall be protected from cross contamination by:
(1) Separating raw animal FOODS during storage, preparation, holding, and display
from:
(a) RAW READY-TO-EAT FOOD including other raw animal FOOD such as
FISH for sushi or MOLLUSCAN SHELLFISH, or other raw READY-TO-EAT FOOD
such as vegetables, and
(b) Cooked READY-TO-EAT FOOD;
Note the photo... the pan is not stainless and it was on the counter all day and the time I was in watching them make burgers they wore no gloves or washed their hands after handling the meat. The raw buns are on the counter next to the meat.
Mark does not know what he is talking about. The meat is refrigerated until it is taken out of the refrigerator and placed in the stainless container on the counter. The meat does not last long enough to get warm before it is cooked. Hudson's get's inspected by the Health Dept all the time and it passes. No one has gotten sick in almost 100 years of serving hamburgers!! I cannot think of another business in CdA that has lasted as long as Hudson's.
