| About: | Perhaps its sleek style (adopted from the original New York location) scares away potential patrons, but anyone who passes up Fiamma is missing out on one of Vegas' most underrated restaurants. This warmly lit, black-and-gray accented trattoria and bar is fixed in a prime location on the MGM Grand's restaurant walk. It is a great place for groups or dates, especially if you want to impress. The menu is divided simply between antipasti, pasta and meat selections, but the cuisine is far from simple. The incredibly tender braised short rib-filled ravioli is a star selection, and black truffle potato puree highlights a list of accompaniments. |

must try truffle mash potatoes: everything was delicious!! The best italian restaurant. Service was one of the best I've ever had. We were sitting in the back room with no one there. But every 10 mins a waitress or waiter came by to make sure our waters was filled and we were good. I was really impressed. I can't wait to go back!! Located at MGM
What a restaurant!! We were totally spoiled: Amazing place. I had the best pasta dish ever. Penne with shaved black truffles, prosciutto, peas, and parmigiano. Also had a killer chocolate dessert - you can't miss this one, it will be the most memorable dessert you've had.
I will go back with my wife each time in vegas. Grt cocktails too.
Perfect on first visit, almost, the second time.: We've been here twice now and although both times were overall very good, the latest time, we had some dishes that were not impressive, ordered from a nearly unchanged "seasonal" menu & the music was loud, but the service was again flawless and the overall value was still there.
We always have a pasta course of the tortelli and the short rib ravioli, which are both always superior. These two pastas are things that make you go to Fiamma over many other restaurants.
However, the salad course, which was two salads, one an heirloom radish & baby lettuce salad and two a Caesar salad. The Caesar dressing seemed watery or the romaine wet and the baby lettuce salad was truly unremarkable. The cucumbers and the radishes were both rather limp, as though sitting in dressing for an extended period.
For a seafood app we had the calamari & the scallops. The calamari had good flavor, but lacked what on the previous visit was a crispy semolina crust. They were mushy, making them something we'd pass on next time, even though the accompanying lemon tocco was again, fantastic. The scallops were completely forgettable.
The rest of the meal was as you would expect - Very tasty, fresh and a good representation of the dish. The prosciutto sausage Bolognese & pasta entree was excellent. The professional chef at our table ordered the mussels and said it was a good dish.
Black truffles were fresh and plentiful ($30 half portion, $55 full portion). Two of us added two half portions to our short ribs. They were served on a bed of polenta and caramelized vegetables, which were both very, very good. The meat was perfectly braised and the flavor was deep & rich - Very good.
We may go back, but in Vegas, with the competition being so high, there's really no room for miscues. Therefore, next time, we may squeeze in a new choice, such as Valentino.
