best in seattle: Great sushi and sit at the bar for a wonderful time chatting with the owner Taichi. For groups try their fixed price japanese dinner, fantastic for special occasions.
Best sushi in Seattle: Im a bit of a sushi-snob and have eaten at most of the quality sushi restaurants in Seattle. Chiso is, so far, my favorite, and I go there as frequently as I can. Some of the highlights are their aji (spanish mackerel) and their albacore tataki (white tuna thats been seared just enough). They are both heavenly and worth the visit alone. They also have other weekly/seasonal special fish, usually local, that you dont normally find elsewhere. I havent found fresher fish elsewhere in Seattle. Their miso soup is also excellent (and more substantial than other restaurants') and they have a respectable selection of sake.
The only downside is that Ive noticed that their prices have started going up slightly (I dont think Im eating more) so each visit hurts the wallet just a bit more than it used to.
