i have worked in a gourmet coffee shop in Southern California for a little over a year and whenever i visit a coffee shop that boast "gourmet coffee" i have two test i like to give their baristas. I don't tell them of course, that i am testing their product or barista skills. Here's the tests. 1) A good Cappuccino and then 2) Latte Art. If your coffee shop can make either of these, then you know you're at a good place. So, test number one. How do you know if the Capp is good or not. two words. Consistency and Spoons. You know you have a good barista on your hands when the know how to steam their milk to the correct consistency without it being overly foamy and then you know you have a FAKE barista if they pour the shots, and then use a spoon to hold back the foam and the scoop the foam to the top. While that may be good for some, it definitely is not gourmet and doesn't live up to a higher standard. Sadly, i ordered a capp and proceeded to watch the lady, whom i know to be the owner because i work next door, use a spoon to hold back the foam to poor the milk and then scoop foam to the top of the cup. Test 1: Failed. As for test two? well i have not been back to test them again but chances are if the barista, who owns the store, cant make a capp without spooning, they definitely can not do latte art.

Dont get me wrong here. This is a good little place. however, it is not "great". I would put Cassie's on par with Starbucks. Cheap, mediocre, run of the mill coffee joint. They are doing good for what they have though. there are three things that make for a really good coffee shop.
    1) A Good Product
    2) A Good Machine
    3) A Good Barista.

Sadly, Cassie's Corner has none of these.

I really like the atmosphere and the coffee is great, you can't beat their prices and that's hard to come by these days, also their wraps and sandwiches are awesome!!!
