About:Blu Sushi Lounge, an expansion of Blu Coral's contemporary Japanese restaurant opened its doors on July 11, 2007. The lounge is located in downtown Evanston on Chicago's North Shore, inside Hotel Orrington. "Blu provides guests with an opportunity to have a relaxed yet sophisticated evening out," said Jonathan Hakes, general manager of Blu. "Our hope is that Blu's guests will fall in love with its contemporary flair, relaxed ambience and diverse menu, and it will keep them coming back again and again." Blu features Japanese-style food, with menu items including lobster tempura, seven spiced ahi, tiger shrimp sushi and Signature specials include hard-to-find delicacies such as blue snapper, apples and cucumber wrapped in fluke and sauteed scallops, served bruschetta-style, all developed by Chef Andy Park.
