The vineyard uses only bio-dynamic techniques for cultivation of their vins which are planted in blocks to meticulously focus on ripening of the grapes. Manure from herds of sheep and donkeys provide rich source of nutrients for the creepers which yield a wholesome crop every year. After the ripest grapes are harvested, they are fermented with the use of only native yeast and the end product is carefully stored in barrels which are made of French oak. This process helps in retaining the authentic nature of their wines. 2012 Esprit de Tablas or 2010 Esprit de Beaucastel are their signature collections and they also have an extensive selection of vintage wines. Tours and tasting sessions at Tablas Creek Vineyard are arranged with as well as without reservation, the former lets patron enjoy exclusive wines and the later offers selected variants.  Less
