Because each cacao farmer grows cacao that has a unique flavor profile, we only use cocoa and cane sugar for our single-origin dark chocolate. Other chocolate bar makers mix different cocoa beans, and often include vanilla to cover the flavors of low-quality bulk beans. Vanillin, a cheaper synthetic flavor, is used sometimes to avoid the cost of natural vanilla. Additionally, most chocolate makers use soy lecithin that flattens tasting notes and contributes to the standardization of the chocolate. We keep our chocolate recipes simple for pure results. We only start preparing our baked good upon receiving an order, or shortly before a farmer's market, to ensure freshness. Any product left from that batch is removed from our shelves a few days later. As a small, artisanal business, we take immense pride in no using preservatives and other ingredients with names we cannot pronounce. For your baking, cooking, and dietary needs, we offer cocoa powder and cocoa nibs. The former can be used for baking, desserts, and beverages, while the latter can be added to various foods, including cereal, oatmeal, ice cream, salads, pancakes, and can replace chocolate chips.
