In a vast land of varying topography and through eons of geography, local produce has played a part in forming regional cooking traditions. Religious groups further modified these cuisines to suit their own restrictions. But spices were always the common denominator. Our primary wardrobe holds cumin, coriander, turmeric, black pepper, mustard seeds, fennel seeds cinnamon, cardamom and cloves.
